The warmer weather lends itself to a different mindset when it comes to menu planning. Often times, you're trying to think about incorporating lighter and spicier foods.
Finger foods work really well too, and with that in mind; this recipe for Spicy Summer Spring Rolls with Peanut Sauce is an easy way to do that.
Here are a couple of notes from this recipe.
1) You can add a protein to the mix if you'd like to. Chicken, pork, beef and shrimp are a couple ideas. But make sure you cut them small enough to fit in with the mixture.
2) Hoisin Sauce is a Chinese sauce that's been compared to a barbecue sauce. It has a very strong salty and slightly sweet flavor. You can easily buy it in the Asian section of your local grocery store.
3) The recipe will have you making more mix than what can fit into the wraps. Depending upon if you want to eat the remainder without the wraps, you could save the mix and utilize other things like wonton wrappers, tortillas or lettuce cups to eat the rest of it.
